The Sheepmeat Language Brocure provides the tools for
objectively describing carcases on the slaughter floor.
Sheepmeat Language Categories are divided into three Basic
Categories (Lamb/Mutton/Ram) and Alternative Categories are
assessed by dentition with a range from 0-8 permanent incisor teeth
and all have unique cipher codes.
Other objective measurements include; Sex, Standard Carcase
Trim, Weight Class and Fat Score.
